Iced oatmeal cookies that are better than lil deb
covered with a strawberry lime icing perfect for summer
I am just fully embracing summer now and am so excited for summer produce. It’s a little early for strawberries (although I did get some good strawberries from my grocery store) so I am using strawberry powder in this week’s bake. I also had two sad little limes in the fridge, so I added those to this cookie as well.
I developed this iced oatmeal cookie a couple years ago, but I came across Heather Mubarak’s pink strawberry iced oatmeal cookies on Pinterest (brownbutterblondie) and have been craving them ever since.
These are perfectly chewy with a bright, summery punch of flavor from the lime and strawberry powder. You can pulse freeze dried strawberries (I use Target’s Good & Gather or Trader Joes) in the food processor until they’re a fine powder or use a pre-ground strawberry powder to make things easier. I used Nature Restore strawberry powder for these.
